Brooke Lazor has taken the unfortunate job of help me lose a few pounds this holiday season. She heard me talk about my ever expanding waistline, and the love/hate relationship I have with carbs and still figured she could help me out no problem. Not an easy job by any means. Thank goodness she is incredibly knowledgeable, and a good motivator, because god knows I need it!
Brooke joined Jack and I this morning and she was able to dispel some myths about foods claiming to be healthy… Much to disappointment! Here’s a little “taste” of some healthy, and delicious recipes you can find on her website (pun intended).
½ cup oats, blended into a flour in food processor/Magic Bullet
½ cup egg whites
1/4 tsp Baking Powder
1/2 tsp Cinnamon (extra if you wish)
1/2 tsp Coconut Flour
1/2 tsp water
Add your choice of add-ins (below)
The How To
In Magic Bullet or food processor, chop oats up into a flour. Add baking powder, cinnamon, coconut flour and water. Give the container a shake to mix up the dry ingredients and add egg whites. Add in whichever extra flavoring ingredients you’d like (below) at this point as well. Put the blender blade back on, and blend for a few moments until fully mixed.
The mixture should have the consistency of a nice, full batter. It will probably take a few tries to get the batter just right, but if done properly, it really should come out fluffy and light and DELISH! If you get too much of an egg-y flavor or consistency, you can also try adding 1 extra tsp water. If it is too runny, add ½ – 1 tsp extra coconut flour, if too thick, add 1-2 tsp extra water.
Let a frying pan heat up to medium heat beforehand and cook in 1/2 – 1 tsp coconut oil (try to stay away from Pam).
Berry Coconut Protein Pancakes
1/4 cup mixed frozen berries
1 tbsp shredded unsweetened coconut
Double Cocoa Banana Protein Pancakes
1 tsp Cocoa Camino cocoa powder
½ of a sliced frozen banana
Pumpkin Spice Protein Pancakes
¼ cup pure pumpkin puree (not pumpkin pie filling)
3 shakes pumpkin pie spice
½ tsp cinnamon
